The video looks great but when I try to start the app from this URL http://deepzoom.soulclients.com/VE/ I am told that the Silverlight beta 2.1 has expired. I have installed the latest Silverlight beta 2.0.30523.

The project requires Silverlight Beta 2. I think you have the right version, 2.0.30523.6 . I have found that some people need to restart the browser after installing, others need a reboot for some reason.
I also found that Firefox can work quite well at picking up the new version without a restart. These are bugs I do hope the SL team sort of for release. Thanks for letting me know your troubles.
